INGREDIENTS

  • 1 lb 93% Turkey Meat ( beef is fine if preferred)
  • Medium Onion
  • 3 cloves garlic
  • Packet of Chili Mix – Lawry’s is Possible
  • 28 oz can plum tomatoes – I prefer Italian style
  • 14.5 oz can black beans
  • 14.5 oz cans of pinto beans
  • 14.5 oz  Mexican style if available
  • 1/4- 1/2 cup chicken stock
  • 2 tablespoons corn meal
  • Small can green mild Ortega chilis

DIRECTIONS

 

  • In about 2 tablespoons of olive oil sauce, sauté onion and garlic until translucent
  • Add turkey meat and stir until crumbled and browned
  • Take plum tomatoes and put in large bowl and “smoosh” with your hands until broken up (tip – works much better than cubed or crushed tomatoes-fresher taste)
  • Add to meat mixture and stir – Include all juices
  • Add little by little Lawry’s Chili Packet – COOK TO TASTE – (I find the entire packet is WAY too strong for my taste. You might want more so add more. I find it’s almost immediate as to how much seasoning you like. I do about 1/3 packet to start.)
  • Add can black beans with liquid
  • add can of pinto beans with liquid
  • add can of corn with liquid
  • add can of Ortega Chilis
  • add 1 tablespoon of corn meal to mixture and STIR
  • Add second tablespoon if needed – (You want to be able to taste corn flavor. Again – cook to taste!)
  • Cook for about 15 minutes to blend tastes on low heat
  • If you feel it’s too thick add more chicken stock.
    (IF I have some red cooking wine available I throw in a “splash”- Adds a smidge of “gourmet”.)
  • Cook another 15 minutes or so and serve with dab of sour cream on top or enjoy plain – Christmas day or any day this is always a hit at our house!
